Halloween Leftover Pumpkin Soup

Did you get that tiny pumpkin too small to carve? Don’t worry, you can put it to a better use in the kitchen. You’ll need only veg you can find in your weekly veg box + some spices you’ll surely find in your flat’s cupboard:

1 pumpkin (any size, the bigger the pumpkinier)

1 medium onion

2 potatoes

1 – 2 carrots (someone likes it sweet…)


oil, salt, pepper, spices (chilli, paprika, grounded cumin, coriander, marjoram… whatever is in yours or housemate’s cupboard) parsley, chive

* Dice the onion and garlic and fry it in a soup pot.
* Persist patient & peel the pumpkin. Cut it into smaller pieces, do the same with carrots & potatoes.
* Carefully take out the pumpkin seeds, clean them and roast them in the oven with bit of oil and salt.
* Put all the veg into a big soup pot with some water and cook until soft with salt, pepper and spices to taste.
* If you like it denser, pour out some/most of the water and blend it with hand mixer.
* Tadaa! Pour it into a bowl, decorate with some yummy roasted seeds and add some chive or parsley to add a green touch.


New term, new produce, new software, newish blog!

The Food Coop entered in its second full academic year! Come and say hi every Tuesday from  12 – 5 in the SU Atrium and see our growing offer. Check out Yogi teas, Hazelnut or Almond Spreads and different alternatives to milk – classic soya, soft almond or cheeky hemp.

Also, our newest addition is delicious breads from Haddie & Trilby bakery in Leamington Spa, Regent Street. Come and taste some yummy samples and pre-order for next week. Plus we can’t forget the aweeesome software developed by Ondrej which now will help us process your orders faster.

We are always hunting for more volunteers since we are planning to open on Fridays as well, so come to the stall or just pop us an e-mail 🙂 It’s so much fun, you meet lovely people and hey, you can wear this awesome Food Coop-tailored apron. Who has that?


Last but not least, we plan to post more things here, not only about Food Coop but also some recipes to inspire you with recipes (or just offer a simple answer to the ‘what the hell I am supposed to do with that green thing in my veg box’ question). And since Food is one of the University of Warwick Global Research Priorities, we’ll update you on exciting events/reports/projects/workshops going on in Coventry/Leamington Spa area as well.
