i say tomato, you soy tomato soup ( vegan )


  • some tomatoes (larger ones will take longer to cook, so cut in half)
  • an onion (if you like, white or red)
  • olive or sesame oil
  • 1 tsp ginger, freshly grated
  • 1 tsp of soy sauce
  • 1/2 – 1 mug of veg stock or miso soup


chop up your tomatoes ! (and your onion, if using one)


place tomatoes (and onions) on a baking tray and drizzle with sesame or olive oilImage

heat your oven to 200 degrees/gas mark 6

roast for around thirty minutesImage

grate your fresh ginger !ImageImage

make a mug of veg stock/miso soupImage

put your vegetables into a blender or food processor and add the ginger, soy sauce and whichever fluid you have chosen (i use veg stock)ImageImageImageImageImageImageImage

heat everything through and eat then and there or maybe flask it for lunch on the go !Image
